I saw this recipe on pinterest and it reminded of an awesome recipe I used to make a long time ago. I haven’t made enchiladas in awhile so I decided to give it a try. I did change quite a few things in this recipe though.
I use corn tortillas instead of flour. Instead of 6 it makes about 12-15 when using corn tortillas. Also season the chicken as well as the sauce. I use salt and pepper and cumin. If you like onion you can saute 1/2 diced onion when you melt the butter, before you add the flour. I dip the tortillas in the sauce before I add the filling and then roll. Then put extra sauce on top with the cheese and bake.I serve this with a side of rice and/or beans. This is a good comfort food dish!

I love a good portabella mushroom. They are delicious on the grill. Their flavor is quite good and is very meaty. A few weeks ago I made a vegetarian version of meat and potatoes. It is a grilled portabella with garlic mashed cauliflower. The mashed cauliflower is a low carb version of mashed potatoes and just as delicious.
For the mushrooms, I usually just brush with evoo and season with salt and pepper. I have also used pesto and that tastes awesome as well. Then just grill for about 5 minutes per side. The last time I made these we were in the middle of a terrible monsoon so I roasted them in the oven instead. Use a high temp of 425 for about 20 minutes.
For the garlic mashed cauliflower this is the recipe I use…
A few things I change are I use more garlic and I saute it in butter. I also steam my cauliflower instead of boiling it. I do not use the cream cheese or chives. These are great and the best part is they are low carb!

I have been trying to make a perfect or even good pie crust for such a long time. I finally figured it out. 🙂 The key for me is using a pastry cutter and putting the bowl in the freezer for a good amount of time before starting.
The recipe is
1 1/4c. flour
1/8 tsp. salt
1 1/2 tbl. sugar
1/8 cup shortening
6 tbl. butter (cold and cubed)
1/8 to 1/4 c ice water
Mix flour, salt, sugar in bowl. Cut in COLD shortening and butter and when ready add ice water, tbl at a time. I then bag it and freeze for 30 min before rolling out.

So now that I have the perfect crust I made a coconut cream pie. It turned out nothing short of amazing. Quite possibly the best pie I have ever had. My husband and son agreed!
A few things I changed in this recipe were I added 1 tsp. of Watkin’s coconut extract. Instead of using 3 cups of half and half I used one can of coconut cream and then used half and half to equal 3 cups total. I did use cool whip for the top but next time think I am going to do homemade whipped topping.

Roman loves tomato soup so after searching many recipes I found this one. I haven’t made tomato soup in AGES! I did change a few things in this recipe. I just used about 1 TBLÂ of butter instead of 1/4 cup. I sauteed 4 garlic cloves, minced up in the butter and then added the other ingredients. I did puree this soup in my ninja master prep. I also used half & half instead of heavy cream.I left out the basil because Roman doesn’t like it. Next time I will make half of the batch with basil. This soup was EXCELLENT! I will definitely be making this again. I froze half of it and it was awesome for leftovers with grilled cheese. I will never buy canned tomato soup again.

Every Sunday night since Anthony gets off early, I have been trying out new recipes. Here’s a few I have made in the past few weeks…..
We really love the lettuce wraps at PF Changs so when I saw this recipe I had to try it. They were SO good! This is a new favorite!

I also made the sauce to go with it.
The recipe for that is 1/8 tsp. sesame seed oil
2 tbl. soy sauce, 2 tbl rice wine vinegar, 1/4 c. sugar, 1/2 cup water 1-2 tsp. chili garlic paste and green onions. Whisk everything together and refrigerate.
Anthony loves french dips and I saw this super easy recipe on pinterest so I gave it a try.
I made some au jus on the side of course. I would recommend baking 5 minutes longer than recipe calls for.

For the past few weeks, Roman and I have spent either Saturday or Sunday in the kitchen baking up some yummy treats. I have never been the best baker, but have been determined to perfect all kinds of recipes. My husband requested lemon bars and how could I say no even though we were already planning on baking pumpkin spice cookies.
For the lemon bars I used a recipe I found on allrecipes.com.
I thought they turned out ok. Not the best lemon bars ever, but Anthony really loved them.

The pumpkin spice cookies are an amazing recipe I found on pinterest. Just 4 ingredients and even though it is still 100 degrees out I can feel fall right around the corner! Since the stores don’t have the pumpkin kisses in yet, I used the dark chocolate ones. Also sanding sugar is a bit difficult to find…I found it at Michaels.

I decided to start a blog mainly for myself. I have a horrible habit of finding amazing recipes on the web and then when it comes time to make that said recipe again I can’t remember where to find it. Maybe it was from http://www.epicurious.com,  http://pinterest.com/,http://allrecipes.com/, http://www.foodnetwork.com/or any number of other websites. I also want to keep a sort of food journal so when I menu plan for my family I can look back to remember what recipes were well-liked.
