I saw this recipe on pinterest and it reminded of an awesome recipe I used to make a long time ago. I haven’t made enchiladas in awhile so I decided to give it a try. I did change quite a few things in this recipe though.

I use corn tortillas instead of flour. Instead of 6 it makes about 12-15 when using corn tortillas. Also season the chicken as well as the sauce. I use salt and pepper and cumin. If you like onion you can saute 1/2 diced onion when you melt the butter, before you add the flour. I dip the tortillas in the sauce before I add the filling and then roll. Then put extra sauce on top with the cheese and bake.I serve this with a side of rice and/or beans. This is a good comfort food dish!
